Joshua Ku, owner of Apple Valley’s new Umami Bowl, spent more than 30 years working with his father, who runs several Thai, Chinese and Japanese teriyaki restaurants in Minnesota and Michigan, until he decided to branch out on his own.
The result is this fast-casual spot (15465 Cedar Ave., Apple Valley; 952-683-9550) that serves dishes from different parts of Asia, including pho, pad Thai, curry and stir-fry rice bowls.
